so much drying, so little time!

so i bought a dehydrator, and i made great use of it today!

first i dehydrated apples:


then i made jerky:


jerk was surprisingly easy. i bought two steaks (eye of round, i think), froze them for a couple of hours, then cut them in strips against the grain. then i mixed up some worcestershire sauce, hot sauce, olive oil, lemon juice, garlic powder, and garlic & herb seasoning, and put it in a baggy with the steak strips.
i let it marinate for 4 hours (i couldn't wait any longer), then dried it at 160 degrees for 4 hours.

up next, i'm making carla's raw macaroons!

i also made some mayo and mustard today!

the mustard is great! spicy, but good. the mayo, on the other hand, i may have messed up.....i didn't melt the coconut oil enough, and it's almost solid now. at least it's pretty in the jar!

you'll want to eat breakfast all day long...

so basically, i'm in love with breakfast. i love bacon, i love those coconut flour pancakes, i love sausage, i love eggs. my breakfast this morning was two of the pancakes, cold, with strawberries and honey, and some bacon. joy!

my bf NEVER eats breakfast unless i make it for him. plus, there are some mornings that i just don't have the get-up-and-go to cook. so after seeing many egg muffin recipes, i decided to make some of my own. i did two varieties, and i'm excited to see how they taste!


i used some maple sausage that i picked up at the market, eggs, onion, green onion, the rest of my green pepper, and some nitrite-free ham from Schneiders.


here are the recipes. keep in mind, I only made 6 of each. you could easily make more by doubling the recipes. for the vegetables, use as much or as little as you want.


Ham Egg Muffins


4 eggs, beaten

onion, chopped
green pepper, chopped
6 slices of ham

Spray pan with oil, and push a slice of ham into each cup. Use a ladle to spoon some egg into each cup (about 3/4 full), then top with some onion and green pepper. Bake at 300 for about 30 minutes.


Sausage Egg Muffins


1 large sausage

4 eggs, beaten
chopped green onion
chopped onion

Bake the sausage in the oven for about 15 minutes or until it's mostly cooked through. Chop up as much of it as needed (I used about 1/3 for 6 muffins). Mix onions with eggs, then mix in chopped sausage. Spray tins with oil, then use a ladle to spoon egg/sausage mixture into the cups. Bake at 300 for about 30 minutes.


Ta-da! I'm going to keep them in the fridge for a quick breakfast or snack. Oh, and they're only 2 WW points each :)

paleo pancakes, anyone?

OMG. i took a vacation day today, and i'm pretty sure in the back of my mind i did it to make pancakes. i was going to fry up some bacon with them, but they were satisfying enough on their own!

they made 16 pancakes total, which are 1 WW point each :)


best part is, i've got TONS of leftover, so i'm going to save them to snack on with fruit and honey, to take for lunch, or even to make sandwiches with!





they're made with coconut flour, eggs, vanilla, etc....and cinnamon, which really made our house smell amazing.

**note: i used honey instead of the coconut nectar, and left out the salt.


on a side note, i went through my cupboards, removed any crap that i wouldn't be eating, and totally organized them.




i found these jars at the dollar store....so handy! up next: the fridge (dun dun dunnn)

sausages and peppers minus pasta equals STILL GOOD

so i made the best supper yet tonight! everytime i go to a restaurant, i order sausages and peppers pasta. well, i was craving it, and with no-pasta paleo, i had to compromise! the result was fantastic...




Here's my recipe:

2 honey garlic pork sausages (or any kind you like, really)
1 green pepper, chopped
1 can diced tomatoes, drained (i used garlic & herb, plus it gave some spice)
1 medium sweet potato, chopped into small pieces
1/2 white onion, chopped
1 tablespoon olive oil

-Line a baking pan (I used a brownie sheet) with tin foil and place sausages in pan. Pierce them with a fork or sharp tool. Bake at 350 until cooked through (15-20 minutes for me)

-Lift tin foil and sausages out and put them on a cutting board. Slice up sausages.
-Heat olive oil in frying pan on medium heat. Add sausages.
-Add onion, cook until onion is almost translucent.
-Add green pepper and sweet potato. Cook until sweet potatoes are tender (I put a cover on to help)
-Add can tomatoes, cook until heated thoroughly.

Ta-da! Each serving (we split it in 2) was only 9 WW points!

week 1 - DONE LIKE DINNER

well, week 1 is done! i'm down 5.5lbs, I feel great, and I'm not bloated at all!

i made kale chips for the first time tonight. i don't know why i waited this long to try them. wow!! so good! i put roasted garlic & herb seasoning on mine, but you could really put any flavour. best of all, they're only 2 WW points!

onward and upward!

well today i'm pretty sure i ate paleo all day!

breakfast was two boiled egg whites and three strips of bacon (Schneider's has a nitrite-free bacon now!)

lunch was a leftover hamburger patty on a fried egg with a couple slices of tomato.

supper was sweet potato fries (white ones! and here i thought they were all orange...) with some guacamole i made in my magic bullet, and a couple slices of bacon.

no pics today, but mmmmmm was it ever good. i'm toying with ways to make "poutine" and stuffed jalapenos, without cheese. dairy is going to be my biggest challenge, i think!

this is day 3 (technically day 4, but i ate a whole bag of popcorn on the first day so i don't think it counts!), and i'm feeling really good. i'm not as hungry as usual, i'm not bloated at all, and i'm feeling overall energetic.

today was the first day i went over my weight watchers points, i think it was the two servings of bacon lol! every other day, without trying to count points, just eating paleo, i only had about half my daily points while still feeling full most of the day. woohoo!

day 2 - the adventure continues!

so a lot of ladies are doing the 30 day challenge now......i'm not that brave yet! i'm doing really well though.


here's the rundown of today:


breakfast - 2 boiled egg whites (the doggy gets the yolks, yech...)


lunch - leftover bbq black beans (the one cheat today, hello legumes!) and turnip, and a paleo brownie


supper - ground beef patty (mixed together with an egg and some rosemary and garlic) on a portobella mushroom, with tomato (i was dying for some avocado on it but the store was all out), and a side salad with my vinaigrette again (olive oil, lemon juice, red wine vinegar).


it looks so plain.....but it was tasty!

dessert - mango/peach ice cream, made from coconut milk and frozen mangoes and peaches

it turned out runnier than i intended, i think coconut cream would be the way to go

all in all, i'm feeling great......no bloating, not as sluggish, and i beat the bf at Wii boxing last night :)
